Caesar salad is a very popular cafe meal at the moment. If you leave off the croutons and check the ingredients of the dressing, it can be a `safe’ primal or paleo meal for those lunches out with friends. I love that it’s a quick and easy meal to make at home. Its nice to serve on the weekend, or when friends come over. As the weather has been getting warmer I decided to search for a good paleo Caesar Salad dressing so that I could have it in the fridge ready. Then it was time to make up a great salad.
Ingredients:
- 1 medium Cos lettuce (aka Romaine lettuce)
- 4 Hard boiled eggs – cut in to quarters
- 4 slices Bacon – cooked till crispy & roughly chopped
- 1 mix Caesar salad dressing
Instructions:
There are many ways of putting this salad together. These range from roughly chopping all the ingredients and tossing them together with the dressing to more precise arrangements. I like to use baby cos lettuce and make mini salads on each leaf.
Variations:
The classic additions to a basic Caesar salad are Avocado & Chicken, or prawns. Just use your imagination and don’t be limited by the `rules’.
Verdict:
Just as we like it!! Quick. Easy. Tasty. Looks impressive. PALEO.
