A couple of days ago I was at home on my own and looking for a quick lunch. You know, something yummy, filling, and most importantly, with very little effort.
I went to the cupboard and picked up a can of coconut milk and looked at it…for inspiration. In only seconds the inspiration came, and about 60 seconds later the Coco-cinnamon protein shake was in a glass ready to drink. So here’s the recipe for you.
1/2 270 ml can coconut milk
1/2 cup water
2 scoops Sandra Cabot Syndrome X powder (whey concentrate)
2 teaspoons raw cacao
2 teaspoons cinnamon
I throw it all in the Thermomix bowl and mix at speed 10 for about 20 seconds.
if you don’t have a TM, put all ingredients in the blender and blend until smooth and creamy.
I like to use AYAM brand Premium Coconut Cream, though you could use any brand. I use this one because, so far, it is the only one I can find that is pure 100% coconut milk. The others all have various additives.
Use a whey concentrate of your choice. I like the Sandra Cabot brand as it is a concentrate (as opposed to an isolate, therefore less processing) and it doesn’t have a bunch of nasty additives. I don’t use a protein powder very often, but there are definitely times when it is helpful to have some on hand.
I use raw cacao a it has a naturally sweet taste. Also raw cacao maintains all the beneficial antioxidants that are destroyed in the processing of many types of cocoa on the market.
The amount of cinnamon may seem like a lot, but it is `just right’ for this shake. And of course it is loaded with anti-inflamatory properties.
This shake is definitely a meal in a cup and will sustain you for a long time.
