Simple salad dressing

A nice salad needs a nice dressing to match….and there are so many on the market. Of course they are laden with sugar, wheat, corn, and various unpronounceable ingredients. To me that is just a challenge to find a really nice, healthy alternative.

I’ve discovered that it is so easy to make a simple dressing, and I now prefer it. A few days ago I had a tiny taste of a popular salad dressing that I used to really like. I was surprised to discover that it now tastes really…..horrible! I’m not even tempted to have it anymore.


  • 50 mls vinegar (I use a mixture of white balsamic and white wine vinegar)
  • 100 mls light olive oil
  • Pinch of sea salt
  • Juice of one lemon

Place all ingredients into jar and shake to blend. Store at room temperature.

Some variations:

  • Add a teaspoon of your favourite mustard and a teaspoon of honey.
  • Add a tablespoon of sweet chilli sauce and use lime juice instead of lemon.
  • Experiment with a selection of herbs and/or spices.
