One of the things that lots of Aussies may really miss when they make the change to a lower carbohydrate primal/paleo lifestyle is mashed potato. Who doesn’t like a nice big spoonful of them with sausages, lamb chops, a casserole and lots of other things! This was something we had to deal with when my hubby was diagnosed with Type 2 Diabetes twelve years ago. They have a very high glycaemic index and very quickly spike the blood sugar levels.
It’s only recently thought that we discovered this great substitute, mashed cauliflower. It just doesn’t sound right, but it certainly is nice. And we’ve even found that it satisfies the want of mashed potato. I think it’s the creamy texture from the beautiful home-made butter that does it.
There is nothing complex about this one. Here goes.
- Cauliflower (a bit more than you would usually use per person)
- Salt and pepper to taste
- Steam the cauliflower taking care not to over cook
- Mash thoroughly
- Add butter, salt and pepper and mix thoroughly
I do all of this in the Thermomix. Quick and easy!
Serve with any meal where you would usually serve mashed the potato.
Notes: When I am away my hubby makes up a big batch and has it ready in the fridge. Keeps well and is easy to re-heat in the microwave.
