Chocolate `mousse’ pudding

This is one for those times when you want something really yummy, really filling, and that looks and feels truly decadent.

Chocolate `mousse’ pudding

Ingredients:

  • 2 ripe avocados
  • 1 ripe banana
  • 1 Tablespoon cocoa powder (I like to use a nice raw cocoa – not as bitter as `supermarket’ brands)
  • 1/4 cup coconut sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla paste

Method:

Put all the ingredients into blender and blend until smooth and a little `fluffy’ like mousse.

Thermomix: Put all ingredients into bowl – Speed 8 for approx 10 seconds. You may need to scrape sides once or twice during mixing.

Serve:

  • In tiny bowls decorated with fresh fruit
  • With fresh fruit and whipped cream (if you’re having dairy)

  1. Great idea for a mousse type pudding that doesn’t involve raw eggs – I’ll definitely have to try this one – probably quite a bit healthier than a lot of recipes due to all that fruit!

    • Sure is healthy. Lots of good fats in the avocado and coconut milk, fresh fruit and a good supply of minerals in coconut sugar……not to mention the great flavour!!! One of our grand-daughters (Miss Mac) made it for breakfast this morning.
