It’s the middle of winter here in Australia so bananas aren’t cheap. We get them shipped down from the warmer areas in the north. Therefore I dont usually buy them often. When I came across half a box of Lady Finger bananas for $5 I snapped them up. They didnt look so great on the outside but after peeling them they were gorgeous. I wanted to make them last as long as possible so I put a whole lot in the freezer.
Many people are not aware that you can successfully freeze bananas, but I find it so handy to have a bag in the freezer.
It really is simple. Get yourself a supply of bananas (not over-ripe, though you can freeze these as well) and some zip lock bags. Peel the bananas and chop them into bite sized pieces, Put into ziplock bag and remove as much air as possible before sealing. Put them into the freezer so that they lay flat. I like to give them shake when they are partially frozen (if I remember) so that they are less likely to stick together.
This is really simple but great when you can pick up some extra bananas cheap. I use them for things like milk/thick shakes (no need for ice or the sugar laden ice cream) and in cooking.
